Can I eat potatoes? I thought they were high in carbs!

We don't want you to feel that potatoes are bad. In moderation, they are a wonderful vegetable that is a whole, unprocessed food and provide satiety and fuel for your body, especially when paired with some high fiber (like leafy greens), healthy fats (like avocado, ghee, or whole-milk dairy products) and protein (meat or legumes). With anything, we encourage you to test out what feels best for you and listen to your body for what it needs.
